Botrytized Indicates that the grape have been affected by Botrytis cinerea, which is a fungus, prevalent in cold, wet weather. This fungus attacks in particularly red grapes. However, in warm, first humid, then dry conditions it can become a noble rot on health white wines. Noble rot shrivels the fruit and so concentrates the sugars to produce quality sweet wines like Sauternes.
